I mentioned at my Healthy New Year Challenge Summary that I’m working on a Delicious Egg Salad, so, here we are:
The falling snow inspired (it’s a white salad) this recipe a few weeks ago when I was thinking about boosting protein…the first I thought of the hard-boiled egg and feta cheese. But I didn’t want a salad drown in mayo, but a few days before my dad made an awesome dressing, so I combined them. It’s easy, really simple and delicious.
Ingredients (about 2-3 servings):
- 2 Hard-boiled eggs
- 50 gr Feta cheese
- 3 tbsp sour cream or greek yoghurt
- 1/4 onion
First of all, boil the eggs, it takes about 5 minutes from boiling (I put the eggs into the warm water and boil them together). The next thing is the dressing. Add the onion and the sour cream/greek yoghurt into a high-walled bowl and blend them with a hand blender. Dice the feta and add it to a bowl with the dressing. Peel the eggs and mash them with a fork and add them to the bowl too. Mix them carefully and put it to the fridge for 10-15 minutes.
I didn’t add any seasoning, it was delicious without them, but season it if you need.
Serve it with toast or as a side dish!

I haven’t had an egg salad for years. I love how this one is made with yoghurt so can be so much healthier than mayonnaise.
Hi Corina! Absolutely…some mayonnaise is just too thick, too fatty, that’s why I can’t stand most of mayos at stores and why I rather made salads with yoghurt 🙂 Thank you for stopping by! – Love, Anna
