Banana Chocolate Greek Yoghurt Muffin! It’s so light, fluffy, soft and delicious, also it’s healthy and made of banana, chocolate and greek yoghurt!
The first 6 week of 2016 flew away so fast and the Healthy New Year Six-Week Challenge gone with it too.
I enjoyed this challenge even more than I did last year! It helped me, motivated me, gave me new ideas, thing to think about, delicious recipes! Furthermore, the chance to be part of a great group full of great people!

However it was 10 days ago, I can proudly say that I’ve done great ever since! 😀
I really hope there will be a new challenge in 2017 too! 🙂

The Healthy New Year Challenge’s last week challenge was to ‘incorporate Full Fat Foods into a Healthy Diet’!
My full fat in this recipe is the greek yoghurt which I love in fact!
The Banana Chocolate Greek Yoghurt Muffin is so light, fluffy, soft and delicious, also it’s healthy!
Banana Chocolate Greek Yoghurt Muffin
Ingredients
- 2¼ cups Flour 2 cups Whole Wheat Flour
- 2 tsp Baking Powder
- 4 tbsp Coconut Oil
- ½ cup Honey
- 3 medium Bananas
- 1 cup Greek Yoghurt
- 2 Eggs
- 1 pinch salt
- Vanilla extract
- 1 Lemon's Zest
- ½ Orange's Zest
- 1 cup Dark Chocolate
Instructions
- Mash the bananas.
- Add the yoghurt, honey, eggs and the coconut oil. Mix them well.
- Stiff the flour and the baking soda on the wet ingredients.
- Add the salt and the vanilla.
- Mix everything together.
- Chop the chocolate, add to the mixture.
- Pre heat the oven. Put muffin liners to the muffin tin.
- Pour the mixture in the liners to half way.
- Bake the muffins on middle-heat for 20 minutes, or until it's golden brown.
Beside the end of the Healthy New Year Six-Week Challenge, there is a big thing coming in 3 days! My Blog will have its 2nd Blogiversary! I’m so proud and happy about it I can even tell!

Great looking muffins! I love using Greek yogurt in baking. Reduces the fat and keeps the moisture!
