Hi Everyone!
I have a delicious and healthy Turkey Medallion-Vegetable Stir Fry for you! I hope you’re ready for some turkey and veggies!
Yesterday when I finally got home, all I wanted is a healthy, simple and filling dinner, not something I make every other day. But I think I’m not the only one, who need something to cook for dinner after a long day, am I…
So I had turkey medallion, and some veggies, so I decided I combine them, but how…? Well, stir fry is the fastest and easiest way to combine them and make it filling, in my opinion. So I prepared every ingredient and the dinner was ready within 30 minutes!
Ingredients:
- 500 gr Turkey medallion
- 1 large Onion
- 200 gr Mushroom (fresh)
- 200 gr Baby carrot (frozen)
- 200 gr Pea (frozen)
- 100 gr Red paprika (fresh)
- 50 gr Spinach (fresh)
- Seasoning: Salt, pepper, chili, 1 tbsp honey (optional)
Preparations:
- Peel and cut the onion into half rings.
- Dice or cut the turkey into strips.
- Peel the mushrooms and cut them into quarters.
- Dice or cut the paprika into strips.
- Dice the spinach.
- Prepare the seasons.
Pre heat a little oil in a larger pan. Add the onion to the oil and sauté until it turns golden color. Next the turkey comes, pile it onto the onion and stir until it turns grey-ish. Add the frozen peas and baby carrots, mix them well. Season it and add the mushrooms, spinach and paprika. Stir it from time to time, it takes about 20 minutes to every ingredient of the stir fry be ready to serve.
I served it with pasta, but it’s perfect for rice or miller or even serve it without any side-dish.
My family loved it, it was ready fast and was really filling!
I hope you liked it!
