Happy Cinco de Mayo Everyone!
Well technically it’s not a holiday in Hungary, but I can’t just sit and see all those colorful food and fun without trying to make one myself.
So the idea of this salad came from two different direction, the first from a liver paste sandwich and second the Cinco de Mayo all over the internet.
So why the liver paste sandwich? Because the tomato and the liver paste is heavenly together! Usually when I eat liver paste sandwich I cut into quarters the tomato and put onto the liver paste spread, really delicious!
So here comes the Pico de Gallo salad, spread and sandwiches!

Ingredients
- 3 tomatoes
- 0.5 long cucmber
- 0.5 onion
- 0.5 tsp salt, pepper, cilantro, cayenne
Instructions
- Virtually the spread and the salad gets done at the same time…
- So first of all, peel the tomatoes(* see the notes!), the cucumbers and the onion.
- With a spoon, scoop the seeds out both the tomatoes and the cucumber. Put the seed into a small bowl, it’s gonna be the spread.
- Dice the tomatoes, the cucumber and the onion, try to dice them the same size.
- Put the diced tomatoes, cucumber and the 3/4 of the onion. The remaining 1/4 onion goes to the spread.
- Spice both the spread and the salad.
- Put the salad into the fridge.
- With a hand blender, smooth the spread.
- *Tips for peeling to tomatoes:1. option: put the tomatoes into boiling water for a minute then into ice water.
2. option: cut the tomatoes into quarters and with a really sharp knife peel it like peel the skin of a fish.
3. option: cut into quarters and if you’re lucky you can just grab the skin of the tomato and pull it of.
Yield: 4 servings
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 15 mins.
Total time: 25 mins.
I used 1-1 spoon full of the spread on my slice of breads; on the first case after the pico de gallo spread I add the liver paste and some more tomatoes and cucumber; on the second case I just add some ham and camembert. Both case was perfect with the spread!
Absolutely worth to try them, and the amazing, colorful salad too!
