Pineapple Chicken Casserole

This delicious Pineapple Chicken is juicy and tender, sweet from the pineapple, just as well as salty and smoky from the smoked cheese and spices!

Ingredients

  • 2 pairs Chicken Breast skinless, boneless
  • 1 Pineapple cored and cut with a pineapple corer
  • 1 tbsp Butter
  • 1 cup Heavy Cream
  • 1/2 cup Chicken Broth
  • 1/2 tbsp Salt
  • 1 tsp Pepper
  • 1 tsp Cayenne Pepper
  • 1 tsp Nutmeg
  • 1/4-1/2 tbsp Turmeric
  • 1 1/2 cup Smoked Cheese grated

Instructions

  • Pre heat the oven.
  • Cut the tendes off of the chicken breasts. (They're perfectly thin enough so there is no need to slice them furthermore.)
  • Slice the chicken breast about 1/2" - 3/4" thick slices.
  • Sauté the chicken breast slices in the 1 tablespoon butter. About 3-4 minutes per side.
  • Add the spices to the chicken while they're sautéing. Makes sure that all slices and both sides of them got enough and even amount of spices.
  • Put the sautéed chicken breast slices into a casserole.
  • Mix the heavy cream with the chicken broth, and 1/2 cup of the grated smoked cheese.
  • Pour the heavy cream mixture onto the chicken slices.
  • Lay the pineapple slices evenly onto the chicken.
  • Top them with the smoked cheese.
  • Bake it on 350-360° for 10-15 minutes or until the cheese melts and get a nice golden color.
