Chocolate Cherry Cake

Chocolate Cherry Cake: Rich, moist and dense chocolate cake with cherry and vanilla cream filling layers and creamy, fluffy chocolate ganache frosting. Perfect for Easter, Birthday, Anniversary or any other celebration.

Ingredients

  • Chocolate Cake:
  • 1 cup Butter
  • 2 large Eggs
  • 2 cups Sugar
  • 1/2 cup unsweetened Cocoa Powder
  • 2 cups Flour
  • 1/2 cup Sour Cream
  • 1 cup Milk
  • 1 tsp Vinegar
  • 1 tsp Baking Soda
  • 1 1/2 tsp Baking Powder
  • Cherry Cream Filling:
  • 2 cups Cherry Juice
  • 2 cups Cherry * leave a few cherries for the decoration
  • 1 pack Vanilla/Cream flavor Pudding Powder
  • 1/4 cup Sugar
  • Vanilla Cream Filling:
  • 2 cups Milk
  • 1 cup sugar
  • 1 pack Vanilla flavor Pudding Powder
  • 2 large Eggs whipped separately
  • Chocolate Ganache Frosting:
  • 200 gr Chocolate
  • 1 tbsp Coconut Oil
  • 250 gr Whipping Cream
  • 250 gr Mascarpone
  • Decoration:
  • Cherries
  • Easter egg candies/chocolates
  • Decor sugar/candies

Instructions

  • Chocolate Cake:
  • Pre heat the oven.
  • Melt the butter.
  • Beat the eggs with the sugar, then slowly pour the butter on them with constant mixing.
  • Add the sour cream, then pour the milk on the mixture.
  • Sift the flour, the cocoa powder, the baking powder and the baking soda on the wet ingredients.
  • Add the vinegar.
  • Mix everything together.
  • Pour the mixture to a baking tin or pan.
  • Bake it on middle-low heat for 30-40 minutes.
  • Cherry Cream Filling:
  • While the cake is baking, you can make the fillings. Mix the pudding powder and the sugar with the cherry juice.
  • Cook it, but just before the pudding thickens up, add the cherries.
  • Let it cool.
  • Vanilla Cream Filling:
  • Mix the milk with the pudding powder.
  • Beat the egg yolks with the half of the sugar and the egg whites with the remaining half.
  • Cook the pudding, when it thickens, add the yolks, then the whites.
  • Mix them well.
  • Let it cool.
  • Chocolate Ganache Frosting:
  • After the cake came out of the oven, let it cool. While it's chill, make the frosting.
  • Stir the mascarpone to lighten it up.
  • Add the whipping cream and whip them together.
  • Melt the chocolate with the coconut oil.
  • Pour the chocolate to the mascarpone-whipped cream mixture with constant mixing.
  • Cut the cake in halves, layer the creams, first the vanilla, then the cherry.
  • Cover the cake with the ganache frosting.
  • Decorate it with cherries, Easter egg candies or chocolates and decor sugar/candies.
