I don’t know about you, but I love fresh herbs! So I had to find a way to preserve them  for the times they’re not seasonal without losing the flavor and/or texture. I found an easy way, so here comes my parsley preservation!

This way of parsley preservation is simple, quick, you don’t lose the taste, nor its texture, it’s like you’re using fresh parsley!

First of all, wash your parsley, then dry it with paper towels! Roughly chop the leaves, then dry them again with the paper towels. Lay the chopped parsley into a container, make sure it has enough room, so you are able to lay the parsley in only a thin layer, use a tray if you not sure your container has enough room! Put it into the freezer for at least a few hours!

After it frozen, it should be crispy, almost chips-like, a little frosty (like above) and if everything went well, it shouldn’t stick together. Why is it important? If the leaves are frozen individually, then it’s easier to use, easier to take out the amount you want and it means the cold didn’t ruined the leaves, the texture, so it won’t get mushy.

I use these frozen parsley in stew, stir fry and in a soup, it worked perfectly in every meal!
