Not-so-layered rice

Okay, so maybe the name is a little strange, but it is what it is! Originally I did this as a layered rice, but I just felt too lazy to do it, so I made the not-so-layered version of it.

Not-so-layered rice - Anna Can Do It!

Okay, so it maybe take some time, but I promise, it’ll worth it! Huge amount and really really filling, plus you can freeze the leftover and just put in the microwave for a few minute and it’s perfect again! 😀

Ingredients:

  • 500 gr rice, cooked
  • 1 kilo minced meat, fried
  • 1 large onion, diced
  • 500 gr corn
  • Home made ketchup, salt, pepper, paprika

To the top:

  • 400 gr sour cream,
  • 2-4 eggs,
  • 250 gr grated cheese
  • salt, pepper, paprika

So, first thing first, cook the rice! While it cooks, dice the onion, pour a little oil to a pan and add the diced onion. When the onion is almost golden, add the minced meat and fry them! Add the seasoning and the ketchup. Taste it! Now add the corn too and cook them for a few minutes.

When the meat and the rice are ready, put them in a large bowl (you’ll need a large one) and mix them! Put the mixture to a heat-resistant bowl. This is when it becomes not-so-layered, but if you want it fancy, and you have more time, layer it (first the rice, then the meat and the corn, then rice, repeat).

Mix the sour cream, the eggs and the seasoning. Pre-heat the oven. Pour the sour cream to the top of the not-so-layered rice, add the grated cheese.  Bake it on middle heat for 20-30 minutes.
